SUMMER FARM TOURS

DEAR FRIENDS: AS THE WEATHER BEGINS TO WARM AND THE DAYS GROW LONGER, WE TRUST THAT YOU ARE AS EXCITED ABOUT SPRING AS WE ARE.

TOUR WAGON ON ITS WAY

WE ARE DELIGHTED TO ANNOUNCE THAT WE HAVE FINALLY ORDERED A TOUR WAGON! It should arrive here at the farm around the middle of May.

WE PLAN TO HOST FARM TOURS EVERY FRIDAY IN JUNE STARTING AT 9:30 a.m. Then in September we’ll again host tours starting at the same time. Tours should last approximately 11/2 hours.

RATES WILL BE AS FOLLOWS:

Adults: $15.00
4-12 years old: $10.00
3 years old and under: Free!

GROUP TOURS CAN ALSO BE SCHEDULED THROUGHOUT THE YEAR FOR $150 PER GROUP. Maximum is about 15 people per tour.

Farm Day Recap + Fresh Chicken

We had a lot of good comments about the Farm Day meal, especially the soup bones, with lots of questions about how they were prepared. So we are sharing the recipe with you. Serves 3-4.

2 soup bones with meat
1 1/2 teaspoons salt
1 teaspoon black pepper
1 medium onion
3-4 medium carrots
1 pint bone broth

Rub soup bones with salt and pepper, and put in a roasting pan with broth. Add vegetables, and bake in an oven at 150 degrees for 8-10 hours. This method can be used for any beef roast, and you can add any vegetables you have on hand.

A big thank-you to everyone who joined us for our Farm Day on May 31st. We enjoyed meeting with everyone, and we give a kind thank you to Dr. MaryAnn Ley for her presentation about the Weston A. Price Foundation .

It was a very interesting day for us. Our apologies again for the not-so-successful tour in the afternoon. I was looking forward to showing you all the animals, but I guess my little tractor had other ideas.

We are still hoping to do regular farm tours in the future, once we find an affordable tour wagon that is in good condition. If you know of one for sale, please let us know.

And now we share details about this exciting event coming up quickly at The Smiling Cow Farm. We will be hosting a Farm Tour on Saturday, May 31st, 10am - 2pm, rain or shine!

Event Schedule:

10:00 : Visiting, getting acquainted, plus petting zoo for children

11:00 : Welcome and introduction by Samuel Esh

11:15 : Dr. MaryAnn Ley - Weston A. Price Foundation Baltimore Chapter Leader, will share a little bit about the Weston A. Price Foundation

11:30 : Lunch will be served with lots of nutritious farm-raised food and drinks. Please note: Donations will be accepted for lunch

12:30-2:00 : Wagon ride tour around the farm. You will get to see pigs and their baby piglets * cows and calves * horses * meat chickens * egg laying chickens * guard dogs * and lots of beautiful scenery

Happy Spring everyone! Isn’t this a lovely time of year, with the earth waking up from its winter sleep. We hope you all are doing well.

New Market Hours for Spring & Summer

Produce Aplenty

The produce season has begun in full swing, with new seeds going into the ground every week. We expect to have ready-to-eat salad greens starting March 27 ($4.75 per 6oz. bag) plus radishes and more coming the following weeks.

Our produce is grown with regenerative practices using compost and natural soil amendments to ensure great-tasting, high-quality products.

Just Around the Corner - Our Website

We’re moving swiftly to launch our website, with mid-April as our target. The site will include product listings and prices, blog postings, customer reviews, links to trusted vendors, a gallery of farm images, and more. As always, you can find us in Google , plus on Facebook and Yelp and a number of other social media platforms.

Ancient Grains & New Products

WE APOLOGIZE FOR THE WAY OUR PORK SUPPLY LOOKS RIGHT NOW. We are running out of most of the sausage flavors. Our next pigs are going to the butcher on March 14 and should be back by the end of March in the form of sausage and bacon, etc. By the way, these pigs have been supplemented since December with ancient grains presoaked in whey and skim milk. We look forward to tasting the difference.

An Important Note : For those of you who did not receive our January newsletter, we will explain the feeding change: Prior to December 2024 we fed our pigs and chickens with organically grown modern hybrid grains. But as of that month we switched to feeding them regeneratively grown, open-pollinated, ancient grains presoaked in whey and skim milk . These ancient grains are sourced from Copper Horse Farm in Lancaster County, PA.

With its warm breezes, blooming flowers, and lush green grass, I can almost taste the rich spring flavor being passed on to our milk and eggs.

WE ARE EXCITED TO ANNOUNCE THE ARRIVAL OF OUR SECOND SON, ISAAC, ON JANUARY 30TH, A HEALTHY LITTLE BOY. He is named after my brother, who helps us out on the farm as needed. Looks like we might have some help growing more food in the future. ;-)

why do ancient grains make such a difference?

Bob Sullivan, Copper Horse Farm owner, explains: “Historically, cultures all over the world developed unique foods with distinct flavors by using completely unique locally sourced ingredients. Wheat, Rye and Corn were some of those ingredients. But today, these grains have been commoditized and processed to the point where they are uniformly flavorless and lacking nutrition.

We decided to go back in time and grow the exact wheat varieties eaten hundreds of years ago using the same farm practices as they did back then, and processing the grain just as they did, on stone mills.

It took over a decade of hard work before we could start to offer these products. Our seed was sourced from seed banks and seed savers all around the world. We were given no more than 1oz of any ancient seed, and from there we needed to grow acres. We tried growing over 50 varieties of ancient grain and we let nature and our customers’ tastebuds decide the winners.

Every step of the way from growing our own seed to packaging and shipping our flour, Copper Horse Farm directly executes each step. No one else is involved in our supply chain, ensuring that you get all the unique flavor, texture and nutrition that these grains have to offer.”

Everything is presoaked and of the finest ingredients. We believe it is good to have some seeds and nuts in your diet, especially considering health benefits.

From Suplee Hollow Cereals : “Why Sprouted Grain? We sprout the grains (oats, seeds, and nuts) and dry them before we do the cereal processing. This helps increase the digestibility of the cereal. Grains that aren’t sprouted before eating emit a gas that can cause a bloated full feeling. Sprouting the grains virtually eliminates any discomfort that comes from eating unsprouted grains. Sprouting increases digestive enzymes, produces vitamin C, and increases vitamin B content, especially B2, B5 and B6.”

GREETINGS FROM THE SMILING COW FARM! This is our first patron newsletter. We hope it will encourage communication as well as be a source for learning about the hows and whys of life on the farm. We extend warm wishes to you following the Christmas and New Year holidays and we hope your memories are rewarding.

WE ARE ALSO LOOKING FORWARD TO HOSTING EDUCATIONAL FARM TOURS - HAYRIDES! - ON SELECT DAYS THROUGH THE SUMMER. These will give a much wider perspective of the farm terrain than can be seen from the market situated in the valley.

Highlights

FIRST, WE WANT TO INFORM YOU ABOUT SOME EXCITING NEW PLANS FOR 2025. Our cousin and good friends Ben and Esther Beiler and their 1-year-old daughter have moved to the farm in a mobile home. They are likewise dedicated to raising clean, nutrient-dense foods. They will be raising the grassfed lamb and pastured chicken, and doing some custom chicken processing. They’ll also be growing a large variety of heirloom produce. Look forward to fresh produce in the winter from their greenhouse production!

WE ARE NOW WORKING WITH A FARMER, BOB SULLIVAN, FROM COPPER HORSE FARM , WHO GROWS ANCIENT, OPEN-POLLINATED VARIETIES OF GRAIN - ORGANICALLY! Ancient grains, versus modern hybrids, contain many times more nutrients, including micro-nutrients. All our pigs, meat chickens, laying hens, and turkeys will now be supplemented with Bob’s ancient grains. So look for ancient wheat flour and cornmeal in our market directly from Copper Horse Farm. And look forward to eating pork, chicken, and eggs superior in taste and nutrition to any you have ever eaten.

All the meats we have raised and sold so far have been raised without the use of vaccines, antibiotics, synthetic wormers, artificial growth hormones, soy, or GMOs. However, we believe with the ancient grains that our pork, chicken, turkey, and eggs will be even better.

oMNIVORES VS. herbivores

HAVE YOU EVER WONDERED WHY OUR PIGS, CHICKENS, AND TURKEYS ARE FED GRAIN - BUT THE DAIRY COWS, BEEF, AND LAMB ARE NOT? Here’s why: omnivores , like pigs, chickens, and turkeys, need vegetation that includes seedheads (grain) and meat (insects) in addition to their pastured diet. On the other hand, herbivores , like dairy cattle, beef, and lamb, need only vegetation in their diet.

An ideal diet for herbivores consists of a wide diversity of grasses, legumes, and forbs (also referred to as weeds). Forbs contain the most nutrition of all plants. This is why our pastures might not look as pretty and nicely-mowed as some. We like to see a lot of forbs in our pasture. :-)
